This Dexter-Russell Softgrip Santoku Knife features a High Carbon 7" steel blade with a soft grip handle.
The santoku's sharp, tough cutting blade makes the knife ideal for most ordinary kitchen cutting chores. However, because of its shorter blade the santoku is not designed for cutting against thick bones or hard surfaces, which could damage or chip the cutting edge.
